Ingredients:

  • 1/2 cup (115 grams) softened butter
  • 1/3 cup sugar
  • 1/3 cup brown sugar* (if you don’t have this, use white sugar instead) taste will vary slightly
  • 1 Egg or Egg substitute* (2tbsp water, 1 tsp vegetable oil and 2tsp baking powder)
  • 1 tsp Vanilla Essence (optional)
  • 1 cup flour
  • 1/2 tsp baking soda
  • 3/4 cup chocolate chips/chunks

Directions:

  1. Preheat oven to 180 degrees C.
  2. Start by beating the butter.
  3. Add in both sugars and beat until soft and creamy.
  4. To the mixture, beat in the egg (or substitute) and vanilla essence (optional)
  5. Add the flour and baking soda to the mixture, and mix until just combined Don’t over mix!
  6. Mix in the chocolate chips. Do not over mix!
  7. Take 2 tablespoons of dough at a time and roll into balls (approx 1.5” diameter). Place 2 inches apart on butter paper / aluminum foil if the dough is too sticky to work with, put it in the fridge for 20 minutes.
  8. Bake for 7-8 minute until golden brown
  9. Take out of the oven, let cool for 10 minutes, enjoy!
